Hailing from the lush, high-elevation montane central zone of Veracruz, this beautiful washed lot is a masterclass in what Mexican terroir can deliver when cultivated and processed with absolute precision. The high altitudes in this specific microclimate force a slow maturation of the cherry, resulting in incredibly dense seeds that take to a light roast profile like a dream. In the cup, we are tasting a deeply complex flavor profile bursting with vibrant dried cherry and rich date, all perfectly anchored by a heavy, natural, unrefined brown sugar sweetness that completely steals the show. It’s a gorgeous, comfort-forward profile with impeccable clarity.
