Methodical Coffee — Colombia Willow

Methodical’s Colombia Willow is the kind of coffee that makes us do the annoying thing where we stop mid-sip and start pointing at the cup like it just told a joke. It’s a natural + experimental community lot from the Young Producer Program in Antioquia & Quindío, built from small, ferment-forward lots so young producers can keep experimenting and you still get a reliably delicious profile all year.
In the cup, expect a bright, fruit-forward ride—stone fruit and berries up front, a rounded chocolate/cacao backbone underneath, and a finish that feels both fruity and clean (like dessert that remembered to be well-behaved).
To brew it, lean into that fruit clarity. For pour-over: 25g coffee / 400g water at 205°F—start with 50g, at 0:30 add to 250g, at 1:30 finish the pour, aiming for 3:00–3:15 total. For espresso, keep it snappy and sweet: 18g in → 38g out in ~29 seconds. This is a “rip the bag open and immediately brew something” coffee—so fair warning: you may become that person who insists everyone smell the beans before you even say hello.
