What’s up, coffee family! We are beyond stoked to get this week’s selection into your hands. Coming to us from the lush Jinotega region of Nicaragua, Finca El Mirador is a masterclass in what happens when a unique microclimate meets absolute resilience. Producers Jose Francisco and Emma have cultivated something truly magical here. Because of the heavy cloud cover and cooler-than-average temps at 1400 MASL, these cherries undergo a prolonged maturation cycle, allowing the seeds to gorge on nutrients and develop incredible density. This lot features a blend of Caturra and Pacamara—and for the gearheads out there, you know that Pacamara influence usually brings a savory-sweet complexity and a distinctively elegant structure that really shines in a fully washed process.
